I'm Chad, and my wife Kristi and I are the founders and owners of Gray Duck Concessions. We are excited to bring this food truck to you and our community. We have a long history of food vending, starting years back with a roasting business. We noticed a need for gluten-free options in the food vending space so we started to craft an idea to bring something to fill that niche. I took a break from the concession business and did some work in the corporate and retail restaurant world. All the while, we worked on what would become this truck. We live in White Bear Lake with our two kids. Outside of food trucks and events, we enjoy trips up to the North Shore and building community through volunteering.
Why mini doughnuts?
Why not?! Mini doughnuts are a staple food for so many festivities and delicious as a basic item, and we wanted to find ways to make them even better. After much experimentation, we came up with a flavor map that covers the most desirable flavor combinations. We took it another step further by sourcing locally made sausages (for our pigs in a blanket) with the doughnut batter, creating another flavor combination to please the pallets of the masses. Our production layout is designed to produce thousands of doughnuts per hour in order to have the ability to serve fresh doughnuts in concentrated demand situations.
